Annual Tour de France Keto Dinner

My husband and I love the Tour de France (he’s a keen cyclist and I just watch for the scenery and food! ha.) so every year, on the first night, I do a big French themed dinner. However, since our family has been following a ketogenic diet, this year I created a “keto friendly” menu.

If you don’t know what the ketogenic diet is it’s basically a low carbohydrate, high fat diet. We recently started eating this way and are amazed by the incredible health benefits.

Anyway, I always have yellow and white flowers, the fire roaring, and lots of candles. In terms of food, I try to make something new each year to push my culinary skills. This year we started with homemade chicken liver & tarragon pate to start, then Ina Garten’s Coq Au Vin with cauliflower puree and sauteed green beans for main, followed by Raspberry Clafoutis for dessert.

All the recipes were pretty simple, so not as much hard work as they look. But each one was absolutely delicious! I’ve linked the recipes below for you too, if you want to give them a try.

For the chicken liver pate, I followed the recipe although added fresh tarragon from the garden and a bit of thyme from the garden. So glad I did, because the pate tasted absolutely delicious!

For the Coq Au Vin, I followed the recipe but didn’t add the flour (which made it keto-friendly) and it still turned out incredibly delicious!  If you’ve never tried cauliflower mash/puree then you MUST! I was the biggest potato consumer you could ever encounter (having Irish and Scottish ancestry I swear I have potato starch in my blood!). I could not have imagined my life without spuds, but my goodness cauliflower mash has SO much more flavour.

You just steam a whole head of cauliflower florets, then puree it with a stick-mixer, add a big knob of good quality salted butter, a dash of heavy cream and a good grating of parmesan. And oh my word, it is soooo good!!!! I didn’t even really like cauliflower before, to be quite honest, but I’m converted. It’s so fast, never lumpy (as long as you use a stick mixer) and it pairs beautifully with SO many dishes. Truly give it a try and let me know what you think!

Lastly, for dessert we had Clafoutis. If you’ve never heard of, or made, clafoutis, well you’re in for a wonderful surprise! It’s a humble custard-like dessert which is all made in one pan and it’s one of the most simple desserts you could make. It also takes no time at all to whip up and can be made with so many varied fruits.
