When you watch a cooking show and need to immediately make what you’ve just seen 🤌🏼 Happen to come across @elizabethpoett ‘s tv show called ‘Ranch To Table’ (which is such a gorgeous show btw) and saw her make these pulled beef brisket sandwiches. My mouth was watering so up to the butcher I went to get beef brisket.
These are sensational and would be perfect for a big BBQ or feeding a crowd. As @iamginodacampo says “minimum effort, maximum satisfaction”. That sums this recipe up as it’s full of flavour.
We used low carb rolls while the kids had mini ciabatta. This will definitely be on rotation this summer. #ranchtotable #beefbrisket #slowcooking

A lovely quick trip up to Aoraki Mt Cook for the w

A lovely quick trip up to Aoraki Mt Cook for the weekend with the fam. I first came here 20+ years ago with family for a holiday, but barely remember it.
Quite amazing to see it now, especially the extraordinary Tasman Glacier which is right behind me in this first photo. If you look closely you can see the ice shelf and all the grey rock fall that’s covering it. It’s absolutely huge.
And that “lake” behind me was once just a small sink hole but the glaciers retreating so much it’s now a lake 5km long. And a breathtaking milky turquoise, with icebergs floating in it.
But honestly I’ve never seen water like the colour of Lake Pukaki which you drive past on the way in/out. Pretty spectacular all around although not the most relaxing weekend as a little someone declared on the weekend he now “hates hiking” 🙄. #purenewzealand #aoraki #aorakimountcook #mountcook
